
It is Pancake Day on Tuesday, and I really want to celebrate it. However, I won’t have time to make some pancakes on Tuesday, so I decided to make some this weekend. This way I can also share with you the results so that you can get some ideas and make your own. I am pretty basic when it comes to pancakes, and that can be a bit boring after a while. Because of this, I wanted to do something a bit different.
CupcakeJemma’s latest video (here) was very helpful for this. In the video she shows us how to make Blueberry Pancake Cupcakes, which obviously look delicious. These cupcakes have some mini pancakes on top, which looked so cute that they made me want to make my own. I basically used her recipe, and I am quite happy with the results, although I think they could be better.
Ingredients
- 110g plain flour
- 2 tsp caster sugar
- About 1.5 tsp baking powder
- Pinch of salt
- 150ml whole milk
- 1 large egg
- 15g melted and cooled butter
- Nutella

The best thing about this recipe is that it could not be easier. You only need to mix all the ingredients together, but make sure you have sifted so that you don’t get too many lumpy bits. You can whisk them together or use a stick blender and a jug, which is what I did and so did Jemma. Once you’ve got your mixture ready, put the mixture into a piping bag and cut off the end. Be careful with that because the mixture is quite runny. I cut too much and it was a bit difficult for me to control it, that’s why they are not as good as they could be.
You will need to heat a pan at a medium heat and grease it with some butter. Your pancakes should be the size of a coin, but you can make them a bit bigger if you want. You’ll know when to flip them because some bubbles will appear on top. The first bunch will probably be crap, but don’t worry because it is normal. Once you’ve got all the pancakes, you just need to spread some Nutella between each one and fix them with a toothpick. I also sprinkled some icing sugar on top just to make them look prettier.
As always, pancakes can be decorated with so many different toppings. You can use any that you like from blueberries to maple syrup, just be creative.
