Baking is one of my favourite things to do in my free time as you probably already know. I really like to make some yummy recipes as the one that I am going to show you today. In fact, I made these Oreo Cupcakes for my birthday, but I forgot to upload the recipe (I am such a mess haha). I found this recipe on Tanya Burr’s blog and I also watched the video she filmed.
Ingredients
For the cupcakes
-
175g butter
-
165g caster sugar
-
3 eggs
-
40g cocoa powder
-
125g self-raising flour
-
1 tsp baking powder
-
1 pack Oreos
For the frosting
-
2 packs Oreos (just in case some of them break)
-
100g butter
-
200g icing sugar
- 1 tbsp milk (if necessary)
Let’s go!
Pre-heat the oven to 180 degrees Celsius. Then put some cupcake cases into your cupcake tin. For the mixture, you will need to mix your butter and sugar until it has a smooth consistency. Remember that the butter must be at room temperature, otherwise, it will be very hard to mix. Next, add the eggs and beat it all together. After that, fold in your cocoa powder, flour and baking powder. In other words, add all your dry ingredients. Once it is all mixed together, pop an Oreo into the cupcake cases so that you have a delicious little surprise inside the cupcakes. This is something everyone who ate one of these Oreo cupcakes loved. Then, spoon the mixture into the cupcake cases, filling them to almost the top. Next, put them into the oven for 14-17 minutes or until your skewer comes out clean (which is the best way to know if they are done).
For the frosting, you need to mix together your butter and icing sugar. Again, it will be much easier if the butter is at room temperature. Next, make half a pack of Oreos into Oreo crumbs. I used a blender to do so, but you can always put them in a sealed bag and use a rolling pin to smash them. Then, add the crumbs to the buttercream. If you think the frosting is too thick, you can add a tablespoon of milk to loosen it. Now, make sure your cupcakes are completely cool and spoon the Oreo frosting onto them. I do not recommend you to use a piping bag because the frosting is quite thick, but if you make it with a looser consistency, you can use it. Then, break an Oreo in half and put it on the top of each cupcake. I think this looks very cute, although you can decorate them as you want.
Personally, I think these cupcakes are delicious! I am a huge Oreo lover, so it was a pleasure to make them and, obviously, eat them! I really hoped you liked the recipe. If you make these Oreo cupcakes, tweet me some pictures or tag me on Instagram. I would love to see how your cupcakes look like!
