Carrot Cake Jars

The other day I was quite bored and I didn’t know what to do. As we are on Easter holidays, I wanted to do some baking, but I didn’t want to use too much chocolate – we already eat a lot of chocolate during Easter. So, I thought I could bake a carrot cake, because I really like them. The recipe I chose for the cake is very simple, but it is the one I normally use. The thing is that I wanted to make it a bit special, that is why I decided to put it in jars. I took the idea from Tanya Burr’s red velvet cake jars, because I thought they were very cute.

Ingredients

For the cake
  • 4-5 carrots (depending on how big they are)
  • 400g caster sugar
  • 260g plain flour
  • 1 tbsp baking powder
  • 3 eggs
  • 240ml sunflower oil
  • 1 tsp cinnamon
  • 100g chopped walnut pieces
For the frosting
  • 230g cream cheese (you can use mascarpone cheese if you want)
  • 60g butter
  • 2-3 tsp milk
  • 1 tsp vanilla extract
  • 520g icing sugar

Let’s go!

First of all, pre-heat the oven to 180 degrees Celsius. Now, you need to grate the carrots. It is better if you do it coarsely. Then, all you need to do is mixing all the ingredients in a bowl. You can do it by hand if you want to, but it is better to use a blender. Once it is all mixed, spoon the mixture into a greased cake tin and put it into the oven until your skewer comes out clean. Allow it to cool completely.

For the cream cheese frosting, you will need to beat in together the cream cheese, butter, milk and vanilla extract until smooth. Then, add icing sugar a bit at a time until it is all incorporated.

Now that you have the cake and the frosting, you need to break the cake into pieces, making sure it is already cool. Take some of this cake and push into the base of the jars making a thick layer. I used some yoghurt jars, but you can use the ones you like the most. Once you have the cake layer, spoon some frosting over the top. You should be careful because you can spread it all around the jar and it won’t look very nice. Repeat that process so that you fill your jar. Then you can sprinkle some cake crumbs at the top. I also sprinkled some ground walnuts. To decorate your jar, you can tie round a string or whatever you feel that looks nice.

I have to say that this recipe is quite sweet, and some people do not like it that much. However, I love it and I would have eaten all these jars by myself! I really hope you liked it, let me know if you make them!
