
MERRY CHRISTMAS! The big day has arrived! I hope you are all having a super festive and cosy day with your family and friends. It is a day to enjoy from the very beginning, so how can we start it properly? Well, first of all we have to open the gifts Father Christmas brought last night for us! After that, it is time to have breakfast. We have nothing to do but enjoy, so let’s cook something yummy!
What I’ve decided to have for breakfast is PANCAKES! Not French crêpes, but American pancakes. I love crêpes, but there’s nothing better in the morning than a REAL pancake. This recipe is from Jamie Oliver, someone I really admire, to be honest.
Ingredients
- 3 large free-range eggs
- 115g plain flour
- 1 heaped teaspoon baking powder
- 140ml milk
- 1 pinch salt
Let’s go!
The first thing you need to do is separating the eggs. Put the egg whites in a bowl and the yolks in another one. It is time to add the flour, baking powder and milk to the yolks. I recommend you to add the milk first, as it will be easier to combine. Mix it all until you get a smooth batter. Now, whisk the egg whites with the pinch of salt until they form stiff peaks. As you’ll notice, this is the hardest step of the recipe because it can be a bit difficult to do and also a bit exhausting. Once you have it, fold into the batter. Do it gently and try not to remove the air of the egg whites.
Heat a pan (medium heat). Pour some of the batter and cook it for a couple of minutes. It has to be golden and firm. At this step you can add any topping you want (if you want to, of course) onto the uncooked side. I decided to add some chocolate chips because I saw it here and also because I am addicted to chocolate (I’m a chocoholic, if you haven’t notice already haha). Now, flip the pancake around and wait until both sides are golden. Now you can enjoy them! I served them with a little bit of caramel. I wanted to use maple syrup, but I didn’t have any. If you want to use another thing or nothing at all, it is up to you. You can also enjoy them with a Gingerbread Smoothie!
